Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp pumpkin spice blend (cinnamon, nutmeg, ginger, clove)

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract

Frosting Ingredients

  • 4 oz cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Begin by preheating the oven to 350°F (175°C) and lining your baking sheets with parchment paper.
  • In a mixing bowl, whisk together the flour, baking soda, salt, and pumpkin spice blend.
  • In another bowl, cream the softened butter with both sugars until light and fluffy. Add the egg, followed by pumpkin puree and vanilla extract, mixing well.
  • Gradually stir the dry mixture into the wet ingredients until just combined.
  • Using a cookie scoop, drop generous spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Baking

  • Bake until the edges are golden, 10-15 minutes. Let them cool on the baking sheets.
  • While the cookies cool, prepare the frosting by beating the cream cheese and butter until smooth. Gradually add powdered sugar, then mix in lemon juice and vanilla extract.
  • Once cookies are cooled, spread the frosting over the top.

Ensure butter is at room temperature for a smoother batter. Store cookies in an airtight container to maintain softness.
