Preparation

  • In a medium saucepan, melt the butter over medium heat. Watch carefully as it begins to foam and bubble, continuing to heat until golden brown and nutty, about 5-7 minutes. Let cool for 10-15 minutes.
  • In a large mixing bowl, combine the cooled browned butter with light brown sugar and granulated sugar. Beat until smooth and creamy. Mix in pumpkin purée, egg yolk, and vanilla extract until well combined.
  • In a separate bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, nutmeg, ginger, and allspice.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until no visible flour streaks remain. Cover and chill the dough for at least 30 minutes.

Baking

  • In a small bowl, combine granulated sugar and ground cinnamon for coating. Roll chilled dough into balls and coat in the sugar-cinnamon mixture.
  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Arrange cookie balls on sheets, spacing 2 inches apart.
  • Bake for 10-12 minutes until edges are set and centers are soft. Allow to cool on the baking sheet before transferring to a wire rack.

For best results, allow browned butter to cool before mixing, measure flour accurately, chill the dough, and bake in batches if necessary.
