Ingredients
  

Brownie Base

  • 5 tablespoons unsalted butter Melted
  • 1.25 cups granulated sugar
  • 2 large eggs plus 1 egg yolk, cold
  • 1 teaspoon vanilla extract
  • 1/3 cup neutral oil like vegetable or avocado
  • 3/4 cup cocoa powder Sifted
  • 1/2 cup all-purpose flour Measured correctly
  • 1 tablespoon cornstarch
  • 1/4 teaspoon fine sea salt

Chocolate Chips

  • 3/4 cup semisweet chocolate chips

Preparation

  • Preheat the oven to 325°F. Line an 8 by 8-inch light-colored metal pan with foil or parchment paper, leaving overhang for easy removal. Lightly spray with nonstick cooking spray.
  • In a microwave-safe bowl, combine the melted butter and granulated sugar. Microwave for about a minute until melted, then whisk until combined.
  • Add the cold eggs and egg yolk to the melted mixture and whisk vigorously for one minute.
  • Stir in the vanilla extract and neutral oil until well blended. Sift in the cocoa powder and mix to incorporate.
  • Fold in the flour, cornstarch, and sea salt with a rubber spatula until combined but do not over-mix.
  • Gently stir in the semisweet chocolate chips, then spread the batter evenly into the prepared pan.

Baking

  • Bake for 30 minutes or until a cake tester comes out with moist crumbs attached.
  • Let cool completely in the pan before lifting out and slicing into squares.

Notes

For a delightful dessert, serve these warm with vanilla ice cream. To store, keep in an airtight container at room temperature for up to three days or in the fridge for a week. Brownies can also be frozen for up to three months.
