Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon until blended.
  • In a separate large bowl, cream the softened butter, brown sugar, and sugar together using an electric mixer until light and fluffy.
  • Beat in the egg and pumpkin puree until well combined.
  • Gradually incorporate the dry ingredients into the wet ingredients until just combined.
  • Fold in the chocolate chips evenly throughout the dough.

Baking

  • Using a cookie scoop or a spoon, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers seem set.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
