Ingredients
  

Brownie Mixture

  • 120 g 70% dark chocolate Plus an extra 30g for topping
  • 120 g unsalted butter
  • 200 g caster sugar
  • 1 teaspoon salt
  • 2 medium eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 120 g gluten-free flour
  • 70 g cocoa powder

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F) and line and grease a 6-inch square cake tin.
  • Break 90g of dark chocolate into pieces and melt with unsalted butter using a bain marie until smooth, then set aside to cool slightly.
  • In a separate bowl, whisk together caster sugar, lightly beaten eggs, vanilla extract, and salt until light and fluffy.
  • Fold in the melted chocolate and butter mixture gently into the egg and sugar blend.
  • In another bowl, whisk together gluten-free flour and cocoa powder, then gradually fold this into the chocolate mixture.

Baking

  • Pour the brownie batter into the prepared pan and spread evenly.
  • Chop the remaining 30g of dark chocolate and scatter over the top.
  • Bake in the preheated oven until firm at the edges but slightly soft in the center.
  • Once baked, cool in the tin to set further before cutting into 9 squares.

Notes

Allow melted chocolate to cool slightly to avoid cooking the eggs. Use gentle folding motions when incorporating flour and cocoa to preserve air. Don’t overbake for gooey brownies.
