Brownie Base

  • 225 g Butter adds moisture
  • 200 g Dark Chocolate, roughly chopped rich flavor
  • 1 teaspoon Vanilla Extract enhances sweetness
  • 75 g Light Brown Sugar adds caramel notes
  • 150 g Caster Sugar contributes sweetness
  • 3 pieces Eggs binds and adds richness
  • 100 g Plain Flour structure
  • 2 tablespoon Cocoa intensifies chocolate flavor
  • 100 g Dark Chocolate, chopped more chocolate chunks
  • 100 g White Chocolate Chips creamy contrast
  • 100 g Milk Chocolate Chips sweet balance

Instructions
 

Preparation

  • Preheat your oven to Gas Mark 4, or 180°C (160°C for a fan oven). Line a 9-inch square baking tin with baking paper.
  • Melt butter and dark chocolate in a heatproof bowl over a simmering pot of water, stirring occasionally until smooth. Let it cool slightly.
  • In a separate bowl, beat together eggs, vanilla extract, and both sugars until pale and voluminous.
  • Slowly mix in the cooled chocolate mixture into the egg mixture gently.
  • Sift in the plain flour and cocoa powder, folding gently.
  • Carefully fold in the chopped dark chocolate and chocolate chips.
  • Pour the batter into the prepared baking tin and bake for 25 to 30 minutes until the top is set.
  • Allow the brownies to cool completely in the tin before cutting.

Notes

For an added layer of flavor, sprinkle a pinch of sea salt on top before baking. Ensure chocolate and butter are completely melted, and cool the mixture before mixing with eggs to avoid cooking.
