Instructions
 

Preparation

  • Combine the flour, baking soda, baking powder, spices, and salt in a medium-sized bowl.
  • Cream the unsalted butter, sugar, and brown sugar in a large mixing bowl using an electric mixer or whisk for about 2-3 minutes until light and fluffy.
  • Add the pumpkin puree to the creamy mixture and mix well.
  • Incorporate the egg and vanilla extract, mixing until fully blended.
  • Gradually add the dry mixture to the wet batter, mixing just until combined.
  • Scoop out 2 tablespoon-sized balls of dough onto a plate and refrigerate for about an hour.

Baking

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Roll the chilled dough into balls and place them on the prepared baking sheet.
  • Bake for 9-11 minutes, until the edges are set and the centers are soft.
  • Allow the cookies to cool on the baking sheet for 3-4 minutes before transferring them to a cooling rack.

Glazing

  • Prepare the glaze by whisking together powdered sugar, ground cinnamon, vanilla extract, and 1 tablespoon of milk, adjusting consistency with more milk as necessary.
  • Drizzle the glaze over the cooled cookies and allow to dry before serving.

Notes

Ensure your butter is at room temperature for proper creaming. Refrigerating the dough helps maintain its shape during baking. Allow cookies to cool before glazing.
