Preparation

  • Preheat your oven to 380 degrees.
  • In a mixing bowl, combine oat flour, baking soda, and salt. Stir until well mixed.
  • Add coconut sugar or brown sugar, white sugar, chocolate chips, and optional nuts into the bowl. Mix to combine.
  • Pour in the vanilla extract and vegetable oil. Mix thoroughly until the mixture forms a large ball of dough.
  • Divide the dough into smaller portions, rolling them into uniform balls.
  • If you prefer soft cookies, refrigerate the dough balls until they become cold (optional).

Baking

  • Place cookie balls onto a baking tray lined with parchment paper.
  • Bake for 9 minutes or until slightly undercooked in the center.
  • Let cookies cool on the tray for about 10 minutes before transferring to a cooling rack.
  • If any cookies haven't spread adequately, gently press them down with a spoon.
  • Store any extra cookie dough in an airtight container or freeze for later baking.
