  • 1/2 cup almond butter (or any nut butter of choice)
  • 1/3 cup pure maple syrup or honey
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup flour (or almond flour for a gluten-free option)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Optional Add-ins

  • 1/3 cup dark chocolate chips or chopped nuts For extra texture

Preparation

  • Preheat your oven to 180°C (350°F) and prepare an 8×8-inch baking pan by lining it with parchment paper.
  • Peel the sweet potato and chop it into cubes. Cook the sweet potato by boiling or steaming until it becomes soft, which will take about 10-15 minutes. Once it’s tender, mash it well.

Mixing

  • In a large mixing bowl, combine the mashed sweet potato with almond butter, maple syrup, and vanilla extract. Mix until smooth and creamy.
  • Add the cocoa powder, flour, baking powder, and salt to the bowl. Stir until well combined.
  • If using, fold in chocolate chips or chopped nuts.

Baking

  • Spread the brownie batter evenly in the prepared baking pan.
  • Bake for 20-25 minutes, checking with a toothpick for doneness.
  • Allow the brownies to cool completely in the pan before slicing.

Serving

  • Enjoy the brownies as they are or top with a sprinkle of sea salt or a drizzle of nut butter.

Notes

Ensure you mash the sweet potato thoroughly to avoid lumps in the batter. Adjust sweetness by modifying the maple syrup or honey according to taste. Store leftovers in an airtight container.
