Instructions
 

Preparation

  • Preheat the oven and line a 9'x13' pan with parchment paper.
  • Prepare the brownies according to the package instructions, then pour the batter into the prepared pan.
  • Bake the brownies for 20 to 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Allow the brownies to cool completely in the pan.

Layering

  • Let the mint chip ice cream sit at room temperature for about 20 minutes to soften.
  • Spread the softened ice cream evenly over the cooled brownies and return the pan to the freezer.
  • Heat the heavy cream in a microwave-safe bowl for 1 to 2 minutes until hot, then add the semi-sweet chocolate chips.
  • Let the mixture sit for 3 minutes, then stir until smooth.
  • Pour the chocolate sauce over the ice cream, spreading it evenly and then return the pan to the freezer.
  • Thaw the whipped topping until it's spreadable, or whip together the heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Spread the whipped topping evenly over the chocolate layer.

Garnishing and Freezing

  • Garnish the whipped cream layer with chopped Andes Mints, mini chocolate chips, or chocolate pearls.
  • Place the pan back in the freezer for at least 3 hours before serving to ensure all layers are set.

Notes

For best results, allow ice cream to soften just enough for spreading. Be careful not to overheat the cream while melting chocolate. For perfect squares, let dessert sit out for a few minutes after freezing.
