Ingredients
  

For the Cookie Dough

  • ½ cup Vegetable oil or coconut oil or canola oil
  • ¾ cup Brown sugar (dark brown sugar or light brown sugar)
  • ¼ cup Granulated sugar
  • ½ teaspoon Kosher salt
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground coffee
  • 1 unit Egg
  • 1 unit Egg yolk
  • 1 ⅔ cups Flour plus 2 tbsp
  • 1 teaspoon Baking soda
  • 1 cup Chocolate chips

Preparation

  • In a large mixing bowl, combine the vegetable oil, granulated sugar, brown sugar, ground coffee, vanilla extract, and kosher salt. Whisk until everything is well blended.
  • Add in the egg and egg yolk. Mix until the batter is smooth and no visible streaks of egg remain.
  • Gently stir in the flour and baking soda until almost fully combined to avoid tough cookies.
  • Fold in the chocolate chips evenly throughout the dough.
  • Cover the bowl with plastic wrap and chill the dough for at least 30 minutes.

Baking

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Portion the cookie dough onto the prepared baking sheet, optionally topping each with extra chocolate chips.
  • Bake the cookies for 9 to 11 minutes until lightly golden.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
  • Optional: Sprinkle flaky salt over the cookies before serving.

Notes

These cookies pair perfectly with milk, are great for bake sales, and can be crumbled over ice cream for an easy dessert. They store beautifully in an airtight container.
