Ingredients
  

Dry Ingredients

  • 2 3/4 cup All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt

Wet Ingredients

  • 1 cup Unsalted butter, room temperature
  • 1 cup Brown sugar, packed light or dark
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 1 Large egg, room temperature
  • 1 Large egg yolk, room temperature

Mix-ins

  • 1 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Oreo crumbs Set aside for finishing later.
  • 3/4 cup Oreo pieces

Instructions
 

Preparation

  • Mix the flour, baking soda, and salt in a bowl to create the dry mixture.
  • Blend about five Oreos into fine crumbs and measure out half a cup. Set aside the rest for finishing later.
  • Pulse six more Oreo cookies into smaller pieces.

Mixing

  • Blend the softened butter with both sugars until light and fluffy.
  • Scrape the sides of the bowl, then add in the vanilla extract, whole egg, and egg yolk. Beat until well combined.

Combining

  • Slowly mix in the dry ingredients until just incorporated.
  • Gently fold in the chocolate chips, Oreo crumbs, and Oreo pieces.
  • Cover the bowl and chill the dough in the refrigerator for about 40 minutes.

Baking

  • Preheat your oven to 350°F. Line cookie sheets with parchment paper.
  • Use a 3 oz cookie scoop to portion out the dough onto the tray.
  • Chill the scooped dough while the oven heats up.
  • Bake until the edges are light golden brown, about 13 to 15 minutes.
  • Let them rest on the baking sheet for around four minutes before transferring to a cooling rack.

Finishing

  • While warm, reshape cookies with a biscuit cutter and top with additional Oreo pieces, chocolate chips, and a sprinkle of Oreo crumbs.
  • Allow cookies to cool completely before enjoying.

Notes

For best results, make sure butter is room temperature, chill dough, and use quality chocolate chips. Store cookies in an airtight container.
