Dry Ingredients

  • 2 cups all-purpose flour provides structure

Topping

  • 1 can cream cheese frosting or homemade, for a creamy, tangy finish

Instructions
 

Preparation

  • Combine the beaten eggs, pumpkin, sugar, and cooking oil in a large mixing bowl. Whisk until smooth.
  • Add the dry ingredients (flour, baking powder, baking soda, and cinnamon) to the wet mixture. Mix gently until just combined.
  • Spread the batter evenly into an ungreased 15x10x1 inch baking pan.

Baking

  • Preheat oven to 350 degrees. Bake for approximately 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the pumpkin bars to cool completely in the pan.

Frosting

  • Once cooled, spread the cream cheese frosting evenly on top of the bars.

Notes

Make sure eggs are at room temperature. Avoid overbaking to retain moisture. Frost only once cooled completely.
