  • 2 cups unbleached all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter, room temperature (2 sticks)
  • 1 ¼ cups granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup canned pumpkin, not pumpkin pie filling
  • 12 ounces semisweet chocolate chips

Preparation

  • Preheat your oven to 350ºF and grease a 9×13 baking pan.
  • In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
  • In a stand mixer, cream together the butter and sugar until smooth and light in color.
  • Beat in the egg and vanilla extract until well combined.
  • Add the canned pumpkin and mix until fully incorporated.
  • Reduce mixer speed to low and mix in the dry ingredients until just combined.
  • Fold in the chocolate chips gently.
  • Spread the batter evenly in the prepared pan.

Baking

  • Bake until edges pull away from the sides of the pan and a toothpick comes out with moist crumbs.
  • Allow the bars to cool completely in the pan.

Serving

  • Once cooled, slice into squares and serve.

Notes

For best results, ensure butter is at room temperature and do not overmix the batter.
