Instructions
 

Preparation

  • Preheat your oven to 375°F and prepare two large baking sheets by lining them with parchment paper.
  • In a small bowl, whisk together the all-purpose flour, baking soda, pumpkin pie spice, and kosher salt.

Mixing

  • In a mixing bowl, cream the softened unsalted butter with the brown sugar and granulated sugar until it becomes light and fluffy.
  • Add in the pumpkin purée, large egg, and pure vanilla extract to the creamed butter and sugars, mixing until fully combined.
  • Gradually stir the flour mixture into the wet ingredients, mixing gently until just combined.
  • Fold in the semi-sweet chocolate chips using a rubber spatula.

Baking

  • Scoop out tablespoon-sized amounts of the cookie dough and place them onto the prepared baking sheets, leaving about two inches between each scoop.
  • Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set and the centers appear to be just slightly underbaked.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Ensure butter is at room temperature for easy creaming. Don’t overmix the dough once flour is added for tender cookies. Experiment with adding nuts or different types of chocolate chips for variety.
