For the cookies

Instructions
 

Preparation

  • In a medium bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt until well combined.
  • In a large bowl, cream the softened butter and sugars together until light and fluffy. Then, add the pumpkin puree, egg, and vanilla, mixing until thoroughly combined.
  • Carefully add the dry ingredient mixture into the wet mixture, stirring until just combined.
  • Using a cookie scoop, drop mounds of the dough onto a lightly greased cookie sheet, ensuring to leave about 2-3 inches between each mound.
  • Bake the cookies at 350 degrees for 12-14 minutes or until set but still soft. Allow them to cool on the pan for about 5 minutes before transferring to a cooling rack.

Frosting

  • Melt the butter in a medium saucepan over low heat, then stir in the brown sugar and heavy cream while reducing the heat to medium-low.
  • Continuously stir for around 2 minutes until the mixture is smooth and slightly thicker.
  • Remove from heat, stir in the vanilla, and pour into a large bowl to cool slightly.
  • Once cooled, gradually add the powdered sugar and mix until smooth.
  • Frost the cooled cookies with the prepared frosting.

Notes

Store cookies in an airtight container at room temperature for up to five days. Adjust frosting consistency with extra powdered sugar or cream as needed.
