Ingredients
  

For the crust

  • 1 3/4 cups graham cracker crumbs adds a crunchy texture

For the cheesecake filling

  • 24 ounces cream cheese, room temperature creates a smooth, creamy filling
  • 3/4 cup granulated sugar sweetens the cheesecake
  • 3 large eggs, room temperature helps stabilize and provide structure
  • 2 tablespoons flour thickens the cheesecake
  • 2 teaspoons vanilla extract enhances flavor
  • 1 cup pumpkin puree adds moisture and flavor
  • 2 teaspoons pumpkin spice mix provides the signature autumn flavor

Instructions
 

Preparation

  • Preheat your oven to 375°F. Cut parchment paper to fit the bottom and sides of a 9x9 inch baking dish.
  • In a bowl, combine the graham cracker crumbs, sugar, and melted butter until it resembles wet sand.
  • Press the crumb mixture firmly into the bottom of the prepared baking dish. Bake the crust for 6-8 minutes until golden brown.
  • Lower the oven temperature to 325°F. Allow the crust to cool slightly.

Making the cheesecake filling

  • In a mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until well combined.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in the flour and vanilla extract until the batter is smooth.
  • Divide the cheesecake mixture in half. Fold pumpkin puree and pumpkin spice mix into one half.

Assembling

  • Spoon alternating dollops of the plain and pumpkin cheesecake mixtures onto the cooled crust.
  • Using a knife or skewer, swirl the mixtures together gently.

Baking

  • Bake in the oven for 35 minutes until set.
  • Turn off the oven and leave the cheesecake inside for an additional hour.
  • Let the cheesecake cool at room temperature for an hour, then refrigerate for at least 4 hours.
  • Lift the bars out using parchment paper and cut into 16 squares.

Notes

For best results, ensure all ingredients are at room temperature, press the crust firmly, and allow ample chilling time.
