Prepare the Dry Ingredients

  • Start by adding the rolled oats, matcha powder, chia seeds, and flaxseed meal to a large mixing bowl. If you like, toss in a pinch of sea salt to bring out the flavors. Give everything a good stir so that the matcha powder is evenly distributed.

Melt the Wet Ingredients

  • In a small saucepan, combine the almond butter, coconut oil, and maple syrup. Heat over low-medium heat, stirring constantly until the mixture becomes smooth and well-combined.
  • Once melted, remove from the heat and stir in the vanilla extract. This will add a lovely depth of flavor to the bars.

Combine Wet and Dry Ingredients

  • Pour the melted almond butter mixture into the dry ingredients. Use a spatula or wooden spoon to gently stir everything together. Be sure to mix thoroughly so that the dry ingredients are well-coated and the texture is even.

Add the Chocolate Chips

  • Fold in the vegan chocolate chips, being careful not to melt them with the warm mixture. These little bursts of chocolate will add a delightful sweetness and contrast to the earthy matcha flavor.

Press the Mixture Into the Pan

  • Line an 8x8-inch baking dish with parchment paper. Transfer the mixture into the dish, spreading it out evenly. Press down firmly using the back of a spoon or your hands (dampened to avoid sticking) to ensure everything sticks together.

Chill and Set

  • Place the dish in the fridge for at least 1-2 hours to allow the bars to firm up. The chill time ensures they hold their shape when sliced.
