Preparation

  • Start by creaming the softened butter and both sugars together in a stand mixer fitted with the paddle attachment. Mix until light and fluffy, about 3 to 5 minutes.
  • Add the vegetable oil to the butter and sugar mixture, stirring until smooth and well combined.
  • Add the egg and vanilla extract, mixing until fully smooth.
  • Sprinkle in the salt and baking soda, mixing briefly until just incorporated.
  • Gradually mix in the oats and flour until just combined, being careful not to overmix.
  • Fold in the coconut, chopped nuts, and cornflakes by hand for an even distribution.
  • Use a cookie scoop or spoon to portion out the dough into balls, about 2 tablespoons each, and place them on a lined cookie sheet.
  • Chill the uncooked cookie dough for at least one hour.

Baking

  • Preheat your oven to 350°F (175°C). Line cookie sheets with parchment paper.
  • Arrange the chilled cookie balls on the lined sheets, spacing them about 2 inches apart.
  • Gently press down on each ball to flatten them slightly.
  • Bake the cookies for 9 to 11 minutes until the bottoms turn golden brown.
  • Allow the cookies to cool on the cookie sheet for at least 5 minutes before transferring to a cooling rack.

Notes

For best results, ensure the butter is softened, chill the dough, and rotate baking sheets halfway through. Store in an airtight container.
